Executive Chef

As an Executive Chef on River Cruises, you will be responsible for overseeing all aspects of the kitchen, including menu feedback, food preparation, staff management, and ensuring the highest quality of food and service.

What will be your main tasks?

• Controlling and directing the food preparation processes (cooking, plating and presentation) of all meals in an efficient manner.
• Checking if all food preparation and presentation meets the company’s quality standards.
• Supervising, training and developing the galley staff to ensure adequate skills.
• Implementing, controlling and managing the HACCP guidelines.
• Scheduling the working shifts and managing and reviewing performance of the galley staff.
• Ensuring compliance with all health, safety and sanitation regulations and conducting regular inspections and audits of kitchen practices.
• Maintaining standard recipes to ensure consistency in taste, presentation and portion control and to minimize waste.
• Placing orders for new supplies and calculating, controlling and checking the amounts and budgets.
• Conducting regular taste tests and inspections to ensure all dishes meet the standards and addressing customer feedback if needed.
• Interacting with guests to gather feedback and ensure their dining experiences exceed expectations.
• Reviewing with the hotel manager the requirements of the meals and time frames for restaurant service.
• Monitoring the food is set-up on time and adequate amounts are prepared.
• Informing galley staff about changes in menu, mealtimes, new products and guests’ numbers.
• Leading by example, setting high standards for culinary excellence and creativity.
• Taking care of all necessary administrative tasks in an accurate way.

Who are we looking for?

• A culinary degree or equivalent certification from a culinary institution.
• Min. 2-3 years of experience in a relevant position in the hospitality industry.
• Knowledge of Food health and Safety regulations (HACCP) and European and International cuisine and culinary trends.
• Experience in managing an international kitchen staff.
• Strong organizational, planning and managerial skills.
• Good communication and interpersonal abilities.
• Being able to communicate in English.
• Able to work in a team and independently.
• Open mentality and being able to lead, support and motivate others.
• Having a good work ethic and creativity.
• Willing to work flexible hours (evenings, weekends, holidays).
